Kikkoman presents novel enzyme assay for rapid early diagnosis of diabetics
The test is based on glycosylated hemoglobin (HbA1c) as a marker, which is preoteolytically digested and selectively oxidized by a proprietary fructosyl peptide oxidase developed by Kikkoman.
