DSM close to obtain permission for the use of L-asparaginase in food

The enzyme (PreventASeR) has been isolated from Aspergillus niger and yield has been enhanced by self-cloning. L-Asparaginase hydrolyses aspartate residues in food to aspartic acid thus preventing the formation of carcinogenic acrylamide through frying.
