Inter- University team and RIKEN solve structure of medaka fish T1r taste receptor protein

T1r belongs to the class C G-protein-coupled receptors which perceive most of major sweet and umami taste substances. Using RIKEN’s synchrotron radiation facility Spring-8, putative binding pockets for these substances in the heterodimer proteins were identified.
